Screens, screens, screens. With technology and cultures advancing, it has become a regular habit to be on our computers, phones and other gadgets most of the time. It has never been more important to protect our eyes from the damaging blue light that causes poor sight and blindness in later life. This veggie concoction is crammed full of vitamin A, beta-carotene and other essential carotenoids. It also contains vitamins C and E, folic acid and iron to protect against and reduce the risks of AMD (Age-related Macular Degeneration). Remember to juice the leaves with some carrot in order to help them get down the juicer shoot. Gulp down this juice regularly for long-term eye health and defence.
Makes about 1/2 litre (depending on the size of your fruit and veg) – tastes like a leafy carrot and ginger salad.
Ingredients: Carrots – 4 unpeeled; unless organic, remove top and bottom / Kale – 2 leaves / Watercress – 1 bunch / parsley – 1 small handful, with stems / Spinach – 1 handful of leaves / Rocket – 1 handful of leaves / Lime – 1; unless key lime, peeled / Ginger – a ‘thumb’ size, unpeeled
